Huli Huli Chicken Marinade
For 2 to 3 lbs of chicken pieces.
1 cup unsweetened pineapple juice
½ cup soy sauce
½ cup brown sugar
⅓ cup ketchup
1 (2 inch) piece fresh ginger, crushed
3 cloves garlic, crushed
¼ teaspoon dry mustard
Marinate at least 4 hours to overnight. Bake at 425 for 30 to 45 minutes.
Huli Huli BBQ Sauce
½ Cup ketchup
½ Cup brown sugar
⅓ Cup soy sauce
⅓ Cup pineapple juice
2 Tsps garlic powder
1 Tsp ginger
1 Tbsp lemon juice
Apply to chicken last 15 minutes of baking.
